
Recently my 18 month old was diagnosed with a gluten allergy, egg, peanut, almond, pumpkin, and casein allergy, so I have been eager to make some delicious recipes that are allergy friendly and not lacking in the flavor department. They were all a hit!
Apple, Banana, Carrot Muffins:
Ingredients:
3.5 C gluten free flour (king arthurs is my fav)
2 tsp. baking soda
1 tsp. baking powder
1 tsp salt
3 tsp cinnamon
4 “eggs” (you can use real eggs but we used namaste egg replacer)
2 C mash banana (I used 3 bananas and mash with a fork or potato masher)
2/3 C oil (we used vegetable)
1 C maple syrup
3 tsp vanilla
3 cup shredded carrot
4 apples shredded (use as much as you want)
Bake on 375 degrees for 20-25 minutes.
*when you store these put a paper towel underneath to absorb some moisture*

Vegan “Cheesy” Spinach Spaghetti Squash

Ingredients:
2 cloves of garlic
1 C raw cashews (you don’t have to soak them)
3/4 C water
1/2 C full fat coconut milk
1/2 lemon juiced
1 tsp salt
1/2 tsp red pepper flakes
1/4 tsp pepper
1 spaghetti squash
4 C spinach
Cut spaghetti squash in half (doing this not only helps it fit in instant pot but also makes longer “spaghetti”
Add 1 C water to instant pot and place trivet
Add spaghetti squash
Set instant pot to seal + cook for 7 min on high pressure
After the 7 minutes do a quick release and take your squash out
Let it cool before shredding
Add all other sauce ingredients to blender and blend on high for 30 sec
Heat oil in pan and sautee spinach with some salt until wilted
Add sauce to pan and mix well
Add sauce and spinach and some dairy free mozzarella (daiya is our fav) to spaghetti squash and stir well + add filling back into spaghetti squash peel
Bake on 350 for 25 min or until warmed through and cheese is melted
